@whatseatindeclan appreciation post: This endlessly kind, hard working, creative, talented & hilarious fellow has helmed the kitchen over (re)opening after lockdown #2, being a bottle shop, (re)opening again, expanding & contracting hours of operation, and finally into a busy, functioning kitchen which has put out amazing, creative, & ever changing food. Declan, we can’t thank you enough for your dedication, flexibility, kindness and humour (not to mention your absolutely bangin’ dishes), over what’s been a crazy time in this industry.
