As a ghanaian, using ripe plantaind yo make a swallow was new to me but i loved it. Gor this recipe, i boiled 2 yellow plantain in water till tender. Takes between 10-15 minutes. I then mashed, while it was still warm to get a smooth mash. I shaped it into a ball and garnisged with red palm oil (optional). I served this with some light soup.
