Spicy Cumin Lamb Dumps 🥟
i love me some dumplings and i love me some spicy cumin lamb biang biang noodles, so why not ✨both✨

300g pork/lamb
150g chinese cabbage, salted n drained
1/2 red onion, minced
1/2 tsp white pepper/ sichuan pepper
handful coriander (around 15g)
pinch salt
pinch sugar
pinch 5 spice
2 tsp cumin powder
1.5 tsp chilli powder (adjust to taste)
1.5 tsp ginger garlic paste
1 tbsp light soy sauce
1 tsp dark soy sauce
2 tsp shaoxing
1 scallion, minced
Dough (around 2:1)
250g flour
pinch salt
100-125ml water
1. in a bowl, add flour, salt n water, mix until shaggy dough forms then knead for 10 minutes and let rest covered for 1 hour
2. in a bowl, add all ingredients for filling, mix until combined (you can pan fry a small amount of filling and taste and adjust to liking)
3. get dough and divide in half, roll dough out and cut into small pieces (makes around 20 wrappers)
4. add tablespoon of filling (or as much as you can handle) and pleat.
5. in a pan of hot oil over med high heat, add dumplings and fry for 2 minutes or until bottom looks brown, add water, cover and steam for 8 minutes.
6. after 8 minutes, uncover and continue cooking until water has evaporated and bottoms are crispy.
