Finally!! Cat's out of the bag! On this week, Google reminded me that seven years ago, @foodwise took a risk on @reemscalifornia to have a 3-month trial run to see if we could make it at the most prestigious market in the country. I had to use a rickety saj while we waited for custom-made ones from Lebanon that got caught up in French customs. 😵‍💫 The first day was a.disaster. My saj was not properly regulated (God knows how I passed inspection) and flames combusted everywhere at least 3 times in front of a crowd of folks who were eagerly waiting for their fresh baked man'oushe for what felt like forever. The dough was hard to work with in the cold weather, and all I could see were the standing folks.watching everything. I felt like dying inside. The next week we adjusted.. brought seating and stools, doled out fresh hot maramiya (Palestinian sage tea) and blasted Fairouz. And like moths to a flame, they started to come. Even though the waits were long people didn't even realize cuz they were having fun, getting to know random strangers around them and enjoying their tea :) when the three months were up, we were overwhelmed by the response-- people took to Twitter and wrote emails to have us back. Pretty soon, we were a staple in that parking lot..with a very long line. Feels great to be inside more permanently. Apologies in advance for the lines about to come as we learn all over again how to run a magical Street Food stand. One things for sure-- you'll always feel the warmth!!
