The Space Honey is another drink it's taken me far too long to write about. It's also an example of how ingredient choice matters. At first it sounds like a slightly fancy Gold Rush. Bourbon, Honey, Liqueur and Fresh Lemon. But when you dive past the generic idea of the ingredients you see the unique characteristics of each ingredient that build into something larger than the sum of its parts. The first step is starting with 100 proof straight bourbon whiskey. This gives a substantial backbone and through line of tannin for the drink. Next is the Chestnut Honey. This is a monofloral honey that is made by bees that exclusively pollinate Chestnut Trees. Less sweet than most commercial honey with a slightly bitter and tannic after taste, Chestnut Honey also has flavors of leather, baking spices, and is slightly smokey. All flavors that compliment and elevate the whiskey. This is complemented by Yellow Chartreuse. The saffron and honey that make Yellow Chartreuse so unique from the green build on the herbal and floral notes of the whiskey and chestnut honey. From there the fresh lemon lends a bright acidity and a few drops of propolis, a resin made by bees in the hive, ties all of the complex flavors together. Garnished with a Sesame Coral Tuile, the first sip will truly make you feel you're experiencing an evolution of a honey whiskey sour that is truly out of this world. SPACE HONEY: 60 ml Straight Bourbon Whiskey 25 ml Fresh Lemon Juice 15 ml Chestnut Honey (2:1) 7 ml Chartreuse Jaune 4 Drop Propolis Extract Combine all ingredients in a cocktail shaker. Shake hard with ice. Double strain over a large rock. Garnish with a Sesame, Coral Tuile
