aglio e olio with summer squash and cherry tomatoes, mascarpone and toasted pistachio anyone that knows me, knows that spaghetti (specifically) is my love language, vegetables are my one true love and i would drink olive oil by the glass if it was more socially acceptable! this dish was a mix of all my loves! This may be the start of a new aglio e olio series. inspired by a dish that I had in ostuni, the addition of the mascarpone over any other cheese (parmesan, burrata) gave it an extra depth of umami flavor and the toasted pistachios for that perfect crunch. this was a simple aglio e olio recipe but I sautéed the summer squash and cherry tomatoes in the oil, garlic and chill flakes first. divine! 🍝
