Who else is 🤤 over this Grain-Free Lime Coconut Zucchini Bread?? 🥥💚🍞 Ingredients 1 1/2 Otto’s Naturals Cassava flour 2 1/4 teaspoon Otto’s Naturals baking powder 1/2 tsp salt Zest and juice of one lime 1.5 C zuchinni, shredded, (blot slightly with a paper towel) 1/2C refined coconut oil or avocado oil 1/4C full fat coconut milk or plain yogurt 2 eggs 3/4-1C granulated sugar 1 tsp vanilla extract Coconut Lime Glaze 1/4C Coconut Butter 1/3C Coconut milk 2 tbsp Shredded coconut 1 tsp Lime juice 1 tsp Lime zest Directions 1. Preheat the oven to 350 degrees and line a 8x4 inch bread pan with parchment paper. Set aside. 2. In a large bowl combine flour, and baking powder and salt, and lime zest. 3. In another smaller bowl, combine wet ingredients: lime juice, yogurt, coconut oil, zuchinni and eggs. 4. Combine wet and dry. Gently stir until just combined. Pour into loaf pan. 5. Bake for 35-40 minute until top has set.
