I love mushrooms and I’m a big fan of U.S. Duck! They’re one of my favorite pairings -- simple to make, but packed with a lot of flavor. This recipe is healthy, yet hearty at the same time. We should incorporate more U.S. Duck meat into our dishes. It is generally higher in fat, but take note that it’s monounsaturated fat – much like olive oil! Did you know it’s also rich in vitamins and minerals such as iron, vitamin K and vitamin D? Another reason to include U.S. Duck meat in your menu. 😃 This pan-seared U.S. Duck breast tastes fantastic with the creamy sweet potato mash and sauteed shitake mushrooms. Finished off with some sea salt and a drizzle of truffle oil. It’s soooo good and only takes about 30 minutes to make!
