no bake cookie dough bars 🍪🤠
Ingredients (makes 8 bars):
1/4 cup tahini
1/4 cup cashew butter
2 tbsp coconut oil, melted
3 tbsp maple syrup
1 tsp vanilla extract
2/3 cup coconut flour
1/4 cup chocolate chips
For the topping:
- 1/4 cup coconut cream
- 1/2 cup chocolate chips
Directions:
In a medium bowl, combine tahini, cashew butter, melted coconut oil, maple syrup, and vanilla. Then, add in coconut flour. Fold in chocolate chips. Spread mixture evenly in a parchment paper lined loaf pan. Place in freezer for 15 minutes.
Combine chocolate topping ingredients in a small pot on the stove over low-medium heat until mixed together, stirring consistently. Remove from heat and let cool, 5 minutes. Remove cookie dough layer from freezer and pour the chocolate on top, spreading evenly. (Optional- sprinkle flaky sea salt over the chocolate.) Place back in freezer for ~30 minutes before enjoying. store in and enjoy straight from the freezer :)
