This recipe falls somewhere between smoothie bowl and fruit ice cream. Delicious and refreshing whatever you call it! PS: the cauliflower is flavorless and makes this oh so creamy! Ingredients 1 C frozen cherries 1C frozen riced cauli 2/3C full fat canned coconut milk 1-2 tbsp tapioca starch 1/4-1/2 C xylitol, or monk fruit (may substitute with maple syrup Or 3-4 soaked and softened dates) Chopped dark chocolate to taste Here’s how: 1. In a large blender, combine cherries, cauliflower rice, tapioca starch, and coconut milk and sweetener of choice . 2. Use a temper stick to help combine, as it will be quite thick. 3.Chop and stir in chocolate. Pour ice cream mixture in a loaf pan.
