Chocolate ganache is my favorite way to enjoy chocolate as of late. Solid enough to hold its shape when sliced, but soft so your fork glides through easily, it really is perfect! A 1:1 mixture of chocolate and cream, you can make it two ways: melt chopped chocolate and cream in a double boiler or pour warm cream over chopped chocolate and set aside a few minutes for it to melt. Make sure you mix well and always use baking chocolate (that comes in the bars) and not chocolate chips. Chocolate ganache has so many uses: as a topping for cakes or tarts, as a fruit dip, or as a cake or quick bread filling.
