Start by boiling some green plantains. Find some that are starting to turn yellow for a little bit of sweetness. Then crush your cooked plantains, form into a ball and flatten. It’s really easy to do this with a tortilla press but you can also do it with a rolling pin. Next cook the wraps in a bit ghee or you can toast in a dry skillet. And it’s ready for your breakfast toppings. I love adding a fried egg on top of some Whole30 compatible bacon and topping it off with a little heat from the Made By Whole30 Buffalo Vinaigrette.
