Key Lime pie smoothie! (Vegan & grain free)
This is the most authentic Key Lime pie smoothie ever! I used a nut butter as a base and thickener— specifically @artisanaorganics Mac coconut or cashew works amazing for this smoothie.
I based this recipe off my key lime pie filling, but adding frozen cauli rice and spinach for hidden veg and an Uber creamy, green and smooth texture!
Here’s how:
Prep Time: 15 minutes
Serves: 1-2
1 -1 1/4C full fat coconut milk (depending on desired consistency)
1/2C mac-coconut butter or cashew butter
1/4 cup maple syrup
1 scoop vegan vanilla protein powder
Zest of 2 limes
Juice of 2 limes
Handful of ice cubes
1.5C frozen cauliflower rice
1/4C frozen spinach
Directions
1. Coat the rim of 2 glasses with lime juice and then dip in graham cracker crumbs (DM for my grain free graham cracker recipe)
2. In a high speed blender, combine all ingredients. If mixture is thick, add a few more tbsp of coconut milk as needed.
3. Toast coconut on a frying pan for 5 minutes on med low heat.
4. Pour smoothies and top with toasted coconut.
