#pastry 📚 Select books that smell of mature paper. Spread the deodorized butter on the pages and let it rest overnight so that it is impregnated with the smell of an old book. Remove that butter with a spatula to dissolve in alcohol. Distill, the alcohol will evaporate and we will have an “absolute” perfume of an old book. This technique is called enfleurage and has been used in perfumery for centuries. We use it to serve in a “thousand-sheet” of earl gray tea cream, cupcake ice cream, caramelized butter tiles and rice paper printed with excerpts from Marcel Proust’s In Search of Lost Time. A tribute to the reunion of literary moments.
