This dish is our ‘tomato gazpacho’ which respects that wonderful tomato we get from the Isle of Wight 🍅 First, we remove the skin and then semi-dehydrate the tomatoes for an hour, we then make a powder from the tomato skins and turn it into a wonderful, vibrant tuile 😍 All the tomatoes we have that aren’t quite ‘sexy’ enough we blend with garlic, lemon and vodka as well as some of the juice from our kimchi, we freeze that with nitrogen and finish the dish.
