EPISODE 1: COZY SOUP RECIPES 🍂🍲☺️ Vegan Butternut Squash Soup (7 ingredients + 30 minutes) So excited for this series and to share all my favorite soup recipes! 🫶🏻 this one is a particular favorite and perfect for Thanksgiving / Friendsgiving 2 tbsp olive oil or water 1 yellow onion, chopped 2 stalks of celery, chopped 3 carrots, chopped 2 cloves garlic, minced 6 cups butternut squash, peeled and cut into medium sized cubes 5 cups vegetable broth 1 cup plant milk, unsweetened (soy, oat, almond) 1 1/2 tsp salt & 1/2 tsp black pepper Pumpkin seeds/pepitas for garnish, optional Add olive oil, onions, carrots and celery to a large pot and place over medium heat. Sauté for 5-7 minutes. Add the garlic to the pot and sauté for another 1-2 minutes. Add the butternut squash and vegetable broth. Bring to a boil, then simmer over medium-low heat for 20 minutes, until the vegetables are tender. Turn off the heat and transfer the soup to a blender and blend until creamy – about 1-2 minutes. (You can also use an immersion blender, but the blender will make it extra creamy) Pour the soup back into the pot and stir in the plant milk, salt and black pepper.
