Now if you have not tried grated tofu, you SERIOUSLY need to ASAP! But make sure choose extra-firm tofu š
The Ingredients:
~ Half medium-sized pumpkin, diced
~ 1 block of extra-firm tofu, 450g, grated
~ 1 tsp smoked paprika
~ 1 tsp ground cumin
~ S & P to taste
~ Oil for cooking
~ 4-6 wraps
~ Half iceberg lettuce, thinly sliced
~ A small bunch of kale, thinly sliced
~ 1/3 cup pickled cucumber or your choice of pickles
~ 4 tbsp store bought or homemade hummus @mezete_global
~ 2 tbsp vegan aioli @wiseboysnz
~ 2 tbsp sriracha sauce
The Method:
~ Pre-heat oven to 180 Celsius
~ In a baking tray, season diced pumpkin with salt, pepper and oil (add spices if you prefer), bake in the oven for 25-30 mins, toss halfway
~ In another baking tray, season grated tofu with paprika, cumin, salt, pepper and oil, bake in the oven for 25-30 mins, toss halfway
~ Remove pumpkin and tofu from oven and allow to cool down slightly before handling
~ Warm up your wrap slightly in a pan on the stove
~ Spread hummus on the wrap and layer lettuce, kale, roasted pumpkin, tofu and pickled cucumber
~ Garnish with vegan aioli and sriracha sauce or swap with your preferred sauce
~ Fold the wrap tightly, as you would a burrito, tucking in all of the veggies with the first roll then rolling firmly to the end. Cut in half and enjoy.
~ Serve 4
