Picking coffee is simple in theory, but not in practice. Cherries are picked based on ripeness (red—dark red color generally means ripe but some cherries ripen to a yellowish-orange). As seen in this photo, coffee cherries don’t all ripen at once so the plants must be carefully picked throughout harvest cycles to ensure the cherries are picked at their peak ripeness which is a major factor in the flavor of the coffee we drink.
