BAKED APPLE PIE OATS
Oats, apples, cinnamon + all the warmth. Meal prepping my breakfast for the week.

š„£ Ingredients (makes 6 servings)
⢠2 cups rolled oats (oldāfashioned)
⢠(I added 1/4 cup protein powder)
⢠1 teaspoon baking powder
⢠1½ teaspoons ground cinnamon
⢠1/2 tsp. kosher salt
⢠2 chopped apples - I kept the peel on
⢠1.5 cups milk (dairy or plantābased)
⢠1 single serve vanilla yogurt
⢠1/4 cup sugar free syrup
⢠2 large eggs
⢠2 teaspoons vanilla extract
⢠2 tsp. cinnamon
⢠1 tablespoon chia seeds *optional
⢠1/4 chopped walnuts

š„ Instructions
1. Preheat oven to ~ 350 °F
2. In a bowl, combine oats, baking powder, protein powder, cinnamon, and salt and chia seeds if using.
3. Stir in the chopped apples (reserve a few pieces for topping if you like).
4. In another bowl, whisk together milk, egg, yogurt and vanilla.
5. Pour the wet mixture over the oat/apple mixture and stir gently to combine.
6. Transfer to a greased 8x8 baking dish and sprinkle nuts on top.
7. Bake for ~ 45-50 minutes, until the top is set and lightly golden.
8. Let it cool a few minutes, then slice and serve warm
