No wonder CA Bakehouse always has a massive crowd outside of their shop front in San Jose’s Little Saigon. Their claim to fame started with the green waffle which gets its vibrant color from freshly squeezed pandan juice. Pandan leaves are native to many Southeast Asian dessert recipes given its sweet taste and fragrant aroma. Now, Mama Lam and her team bake up a variety of classic Asian pastries and French pastries with a very Southeast Asian twist. Think, egg tarts, croissants, and choux but with pandan, durian, black sesame, and ube. One of the baked goods I loved most is their banh bo nuong or Vietnamese honeycomb cake. The rice flour gives it such a nice bounce and bite!
