At the start of the pandemic, I started taking photographs of the team which got me started on this portrait series featuring the faces that has helped us get through the times and continue to make things happen.
Our J-1 visa program is back and going at full steam again. After sadly having candidates forced to return home at the on set of Covid-19, happy to have an international presence back within our teams.
Matteo is a great example of this program’s success and lasting benefits. We strive to have a ‘melting pot’ of chefs in the kitchen and front of the house. A 27-year old veteran of Antica Corte Pallavicina in Italy, The Fat Duck in England, Mirazur in France, Noma in Denmark, and Ceto in France.
“I’ve learned a lot during these years and I came to understand several techniques, working and cooking methods, the importance of and respect for products but above and all, the value of effort and teamwork, of being professional, discipline and engage with everything we do. I believe that being a part of this team will be a great opportunity for me to continue to evolve and improve.” -Matteo Zega
Part of our training is not only cooking, but includes harvesting and supporting @vegetableman20 and the @freshrunfarm team out in the fields. If you’re interested in joining the Quince & Co team, we are accepting applicants - please email [email protected]
