Made Khao Soi with chicken meatballs 🍜 I’ve become actually obsessed with Thai food this past year... I make this dish at least few times a month. So light, yet filling and perfect for rainy days. Enjoy! X Instructions: 1. Make the meatballs: Add 1 pound of ground chicken, 2 green onions finely chopped, 1 inch of fresh ginger (grated), and 2 garlic cloves, in a large mixing bowl. Add some salt & pepper as well. 2. Mix ingredients until combined. 3. Coat some olive oil in your hands and roll the meat into balls (I make about 15) and place on a plate. 4. Add olive oil to a large, deep pot or pan and when the oil is hot add the meatballs. 5. Let the meatballs sear about 5 minutes then add 4 chopped baby bok choy to pan. 6. Cook another few minutes until the meat is charred on edges and the bok choy is more vibrant. 7. Remove everything from pan and transfer to plate. 8. To the same pan add some more oil and then 1/4 cup of red curry paste. Cook for 2 minutes. 9. Add 2 cans of coconut milk, 3 cups of chicken broth, 3 tbsp of fish sauce, and a tbsp of honey. 10. Add the meatballs with the bok choy back into the pan. 11. Add in some more green onions and a handful of chopped basil. Squeeze a lime into the soup. 12. Let it simmer over medium heat for about 10 minutes 13. While the soup is cooking, cook either egg noodles or rice noodles according to the package instructions. 14. Ladle the desired number of noodles into a bowl along with the soup! 15. Top off the soup with more herbs, shallots, lime, and chili oil. 16. Enjoy! #kennyskitchen
