Happy Saturday! 🥰 Ingredients: 1c rolled oats 3/4c oat flour 1/2tsp baking soda 1tsp cinnamon 1/4tsp nutmeg 1 mashed banana 1/4c almond butter 1/4c maple syrup 3 drops vanilla (I used @dottera) 1 flax egg* 1/2c grated carrots 1/4c walnuts 1/4c raisins Method: 1)preheat oven to 350F and line a baking sheet with parchment paper 2)for flax egg, combine 1tbsp ground flaxseed with 2.5tbsp water. Set aside 5mins to “gel” 3)In a large bowl, combine all dry ingredients except carrots, walnuts and raisins 4)In a separate bowl, combine all wet ingredients, including grated carrots. 5)Pour wet into dry and stir till combined 6)Fold in walnuts and raisins. Then use a cookie scoop to transfer dough on your baking sheet. Slightly flatten into cookie shapes and top with grated carrots. 7)Bake 18-20mins until lightly golden 8)Let cool, then top with melted coconut butter or glaze of choice and enjoy! 💫
