Catherine Riss - Dessous de Table 2020 Pinot Auxerrois & Sylvaner An assemblage of two varieties that spend their lives on the same plot of Sandstone, a terroir which makes up most of Catherine’s tiny domaine in Reichsfeld. Until recently, Catherine has farmed and vinified almost completely alone, hand harvesting in small crates with the help of local friends. 2020 was a turning point, the first year that Catherine hired a full-time team for the vintage, an entirely female workforce supporting her in the vines and cellar. The grapes for her white blend undergo 8hrs of pressing in an ancient press, allowing the juice to be drawn out. Nothing here is rushed. Alcoholic & malolactic fermentation takes place in burgundy barrels (neutral, at least 5 to 7 years old). Elevage is on lees for ten months, with no racking during elevage, no fining or filtration, and no sulfur added.
