No-bake cheesecakes are the best and this passionfruit one is ridiculously good: minimal effort, high reward. I will be back in the kitchen shooting new recipes for you this week after I didn’t manage to shoot anything on the busy weekend so for now, enjoy this oldie but goodie 🫶🏻 Ingredients 500g/ 2 cups cream cheese 270ml / 1 cup double cream 100g / 1/2 cup icing sugar 300g / 3 cups biscuits 100g / 1/3 cup unsalted butter 4 passionfruit Topping: 100ml whipped cream (optional) 2 passionfruit Instructions 1. Crush the biscuits into a fine crumb. Then add the melted butter and mix. Press the crumb into a deep 8-inch baking tin with a removable bottom. 2. In a standing mixer, whip the double cream until firm peaks. Then add the cream cheese and icing sugar. Whisk together until all combined. Cut your 4 passionfruits and spoon out the centre into the cheesecake batter. Fold through. 3. Add the filling to the the baking tin and even it out with a spatula. Leave to chill for a minimum of 5 hours in the fridge. I like to leave mine overnight. 4. When ready to serve: remove from the baking tin, whip your cream until firm peaks and spread on top of the cheesecake. 5.
