that’s what good..... butternut squash mac n cheese sounds like 🧀🧡 HEAVEN. recipe below Ingredients for Sauce - 2 cups chopped butternut squash - 1 large carrot chopped - 1 cup chopped yellow onion - 7 cloves garlic - 1 cup raw cashews (must soak overnight or in boiling water) - 1/4 cup nutritional yeast - 1/2 lemon squeezed - 1/3 cup dairy free milk - Salt n pepper 1. Soak cashews overnight or in boiling water till soft 2. Roast squash carrots onion and garlic in oven at 400 degrees for 35-40 mins with olive oil salt n pepper 3. Blend together roasted veggies, cashews, lemon, nutritional yeast and milk 4. Cook pasta al dente, pour over sauce + keep leftover pasta water to immerse 5. Add lots of salt n pepper! 6. Voila! So creamy & delicious
