(Save the planet [recipe]) 🌎 My Brussels sprout ‘guacamole’ 🥑✌️🌱 Adapted from my cookbook #eatingforpleasurepeopleplanet (pick one up this Xmas using the link in my bio) This is a delicious dip that creates conversation! Serve it up before your festive roast or take it to a pot luck party with some chips and let me know below what you think! Makes 1 sharing bowl 360g Brussels sprouts, boiled till al dente glug of extra virgin olive oil 2 tablespoons water 1 clove garlic 6 fresh coriander sprigs 1 unwaxed lime, zest and juice Blend the sprouts in a food processor with the oil, water, garlic, coriander stalks, half of the coriander leaves, lime zest and juice into a smooth purée. Season to taste with salt. Serve in a bowl with tortilla chips or on bagels topped with the remaining coriander leaves and optional sliced red onion, chilli, a dusting of sumac, if using, and a drizzle of olive oil.
