Succulent Summer Roast Chicken with Hellmann’s Real Mayonnaise!
Roast chicken is always on the menu in our house, from Sunday lunches to a key ingredient in summery salads and wraps during good weather. The key to keeping your roast chicken from becoming dry and tasteless is the right seasoning/basting. If you have never tried to roast a chicken with @hellmannsuk Real Mayonnaise you are really missing out. It browns the chicken beautifully and keeps the meat really moist and flavoursome. Here’s what you need:
Serving size: 5
Prep time: 10 minutes
Cooking time: 1 hour and 40 minutes
Ingredients
•1 full chicken (1.5 kg)
•2 onions
•1 cup of Hellmann's Real Mayonnaise
•Zest of 2 lemons
•1 tbsp paprika
•1/2 tsp cumin
•Sea salt and pepper
Method
1.Pre heat your oven to 180 degrees Celsius.
2.Wash your chicken.
3.Slice 2 onions to put under your chicken so it doesn’t stick to the tray. This is a great way to use up any older ones you have in the cupboard, so they don’t get thrown out!
4.Mix the Hellmann’s Real Mayonnaise, lemon zest, paprika, cumin, sea salt and pepper together.
5.Brush the chicken with the Hellmann’s Real Mayonnaise mix until fully coated. Make sure to keep some mix to use again later.
6.Place the leftover lemons in the chicken – it adds a delicious flavour and helps reduce wasting these!
7.Cover the chicken fully with tin foil.
8.Cook for one hour, then remove the tin foil and brush with the Hellmann’s Real Mayonnaise mix again, before cooking for further 20 minutes with the tinfoil back on.
9.Brush one final time and let it brown up for another 20 minutes without the tinfoil this time. Cook for a total of 1 hour and 40 minutes.
Serve the chicken with whatever you have left in your fridge, I had some veggies and potatoes so I roasted them to serve with the chicken. Then the next day I used the leftover chicken again with some leftover salad bits, to make something out of nothing!
