You’ve heard of Summer Corn Salad... now let me introduce you to her cousin, Spicy Peach Salad! This super pretty salad is juicy, sweet, a little spicy, and herbaceous as heck. I can’t get enough of it! Yassi, this one’s for you! 😘😂 . . . As we all know, I don’t measure anything so this salad can quite literally be made with whatever measurements your heart tells you, but here’s roughly what I did. Dice 1 peach (firm is best for dicing), 2 Persian cucumbers, 1/4 of a purple onion, and 1 jalapeño into small cubes. The smaller the better in my opinion just because that’s how I like it. Slice the corn off of 1 cob and toss everything in a bowl with a drizzle of olive oil, juice of 1/2 a lemon, salt and pepper to taste. Once everything is coated, chiffonade (finely sliver) some fresh basil and mix into the salad along with crumbled feta. Not pictured is the crushed pistachios that go on top... don’t be like me and forget those, it takes the salad to another level! If you want to make this a more wholesome meal, grilled chicken would be delicious on top! Enjoy these super fresh summer salads while you still can friends, I know I will be! 🌽🍑🥒🍋
