Once they’d settled in the secluded forests of the Rheingau region, their abbey quickly grew to become one of Germany’s biggest and most influential Cistercian monasteries. Its highly profitable business was based on wine. The monks developed new pressing techniques, cultivated vast vineyards and used the largest wine barrels available at the time.
