G R A I N - T O - P L A T E 🌾✨🍽️ I’m excited to re-share Episode Two of the Unearthed Series which I’ve been making with @Waterforddistillery This collaboration has become a passion project for me because Waterford care deeply about the provenance and quality of their ingredients, investigating the unique flavours that occur with a sense of place. I’ve learnt about the whole process of making whisky from their amiable and inspiring head distiller Ned. I wanted to return the favour and cook for him and the team. Barley is a delicious grain that doesn’t just make good whisky. I made a barleyotto (risotto made with barley) to pair with Waterford’s Gaia - their organic whiskey. Our meal consists of local and seasonal ingredients, sourced in Ireland on the Jacksons’ Lacka farm (recipe coming soon)!
