Also quite possibly the best shrimp I’ve ever made?! Recipe below 🦐 Ingredients - 2 tbsp neutral oil - Head on shrimp, cleaned and trimmed - 1/2 tsp flaky sea salt, plus more for serving - 2 shallots, finely diced - 4 cloves garlic, finely minced - 2 Thai chili pepper, thinly sliced - 1 stalk lemongrass, thinly sliced - 4 scallions, thinly sliced, light and dark greens separated - 2 1/2 tbsp unsalted butter - 1 lemon, cut into wedges Preparation 1. Add neutral oil to a large pan over medium high heat. Once oil is shimmering arrange, shrimp in a single layer, season with salt, and cook undisturbed until shrimp is browned, 2-3 minutes. Flip and cook other side for 1 minute. 2. Add shallots, garlic, chili pepper, lemongrass, and light parts of scallions to the pan and cook, tossing occasionally, for 2 minutes until aromatics are fragrant and shallots have softened. 3. Add butter to the pan, frequently stirring until butter is melted. 4. Squeeze lemon cheek over shrimp, transfer to a serving dish.
