Extra juicy eggplants šŸ†šŸ’¦ chinese style (šŸ‡«šŸ‡· plus bas) As you may know I grew up in China, and obviously my favorite thing there was THE FOOOOOD 🤤 So I'm bringing back one of my favorite childhood recipes: super mega extra hot melting eggplants šŸ”„ Bonus: the recipe is #vegan friendly šŸ¤— (I'll probably make an alternative version with typical chinese eggplants for a traditional Sichuan recipe later) Ingredients (serves 4) : • 2 regular eggplants • 6-8 medium to large garlic cloves #OuhYeaaah • 2 onions • 2 Tbsp roasted sesame seeds • 20g ginger • 2 red chili peppers • 4 Tbsp sweet soy sauce • 4 Tbsp mushroom soy sauce • 1 Tbsp sesame oil • Frying oil Steps: 1. Dice the onions, squeeze the garlic, and cut the eggplants into large cubes. 2. On high heat, in a large pan, fry the onions until golden, then add the garlic, then the eggplants, and cook it all together for 2mn. Stir well so it doesn't stick. 3. Add all the sauces, mix well, reduce the heat to low, and let simmer for 15mn. 4. Mid cooking, cut the ginger in large slices then add it to the pan. Cover. 5. After 15 to 20mn, dish should be all melty and juicy. 6.
