Beef Wellington paired with our @dallasbourbonclub Signature Charity Barrel pick (Weller Full Proof) that raised $70k for @bontonfarms! The recipe & video are at meatchurch.com but here ya go: • center cut beef tenderloin (chateaubriand) - I used @44farms • season with our Holy Cow • sear for 2 mins each on 4 sides in a cast iron skillet - I used a @traegergrills Timberline XL induction burner • slather in English mustard while it’s hot. allow to cool • wrap in 8 slices of prosciutto with a mushroom\garlic\shallot duxelle • roll in cling wrap • place in the fridge for 30 minutes to help it hold shape •!wrap in 1/4” thick puff pastry • place in the fridge for 15 minutes to help it hold shape • wrap in an optional lattice • egg wash all over then add coarse salt • cook at 400° until 120-125° internal for mid rare - I used a @traegergrills Timberline XL with Meat Church pellets Merry Christmas y’all! ——————————————⁠——————— #MeatChurch #TexasBBQ #BeefWellington #HolidayMeal
