Acqua di pomodoro con mozzarella di bufala- another summer favourite. We served this as the starter at our wedding, and six years on, people still talk to me about it and ask how to make it. It’s a great cold soup for summer and it affords the opportunity to enjoy the holy trinity of flavour combinations - tomatoes, basil and mozzarella- in a chilled soup format, which is refreshing and delicious as well as being a little different from my usual favourite- a caprese. πŸ…πŸ€πŸŒΏ It’s super simple to make, all you need are the best summer tomatoes you can get your hands on and space in your fridge, it freezes well too if you want to make it ahead of time.
