PINCH OF PEA & HAM SOUP To babe or not to babe? Inspired by @andyhearnden & his babe 🫶 Ingredients 📝 1 tbsp olive oil 1 large brown onion, chopped 3 garlic cloves, minced 2 celery sticks, chopped 1 1⁄2 cups dried green split peas, thoroughly rinsed 2 bay leafs 1 smoked ham hock 2 cups low sodium veg stock 6 cups water 3 cups frozen green peas, thawed Pinch of salt & pepper GARNISH 🍃 Thawed peas Sour cream / crème fraiche Watercress, mint or parsley Crusty warm buttered bread 🥖 Method 1. Heat oil in a large heavy based pot over a medium heat. Add onion and garlic and cook for 2-3 minutes until onion have softened. 2. Add all the ingredients EXCEPT the frozen peas and bring to a boil. 3. Cover and simmer for 2-2.5hrs until soup has thickened and ham is falling away from the bone. Stir frequently at the start so no peas stick to the bottom of the pot. 4. Remove hock from the pot and allow to cool slightly before removing the skin and chopping roughly. Set aside. 5. Discard bay leaf from the pot and add thawed frozen peas (save some to garnish). Using a blender or hand stick blender, blitz in batches until soup is vibrant green and desired consistency. If you want it runnier, add a little water to thin it out. 6. Return soup and ham to the pot, season with salt and pepper to taste and heat over a medium heat until warmed through. Garnish with extra peas, fresh parsley and a little crème fraiche or sour cream.
