Loaded Prime Rib Baked Potatoes Ingredients
-3 lbs baked potatoes (poked with a fork, rubbed with olive oil)
-2 lbs leftover prime rib, chopped (or any other protein you have on hand)
-Salted butter
-Shredded mozzarella
Salt & pepper
Minced chives
Directions
1. Bake potatoes at 450°F for 1 hour until soft inside, crispy outside.
2. Cut in half and add generous slabs of butter, salt & pepper.
3. Mash the butter into the fluffy potato with a fork.
4. Add a heaping amount of mozzarella and mix it in until melted and gooey.
5. Top with chopped prime rib and more mozzarella.
6. Broil until bubbly and golden.
7. Finish with fresh minced chives on top.
