Taco Skillet 🌮 Recipe: 1lb 99% lean ground turkey 1 tbsp olive oil 1 medium yellow onion, diced 1 red bell pepper, diced 1 green bell pepper, diced 1 jalapeno, diced 2-3 cloves garlic 2 small cans tomato sauce (16 oz total) 1/2 cup tri colored quinoa 1 can black beans (15oz) 1-2 tbsp taco seasoning 1 cup water Toppings: 1/5 medium avocado, 1oz non-fat plain Greek yogurt, 5 tortilla chips, cilantro, lime wedge Sautee the onion & peppers in olive oil until onions are translucent- about 5 mins. Then add in minced garlic and sautee 1 more min. Add in ground turkey and taco seasoning. Cook & combine. Add in tomato sauce, black beans, quinoa & water and gently stir together careful not to overfill! Cover and let simmer on low for 20-25 mins until quinoa is fully cooked.
