I got a bit excited bought way too much fresh produce last week. So this weeks food saving is all about meal planning (and sticking to the meal plan) for next week so all of that produce actually gets eaten. And the capsicum dip recipe is really simple. 2x capsicums - cut into strips, drizzle with olive oil, add 1-2 garlic cloves to the pan and roast for 30 minutes. In a food processor blend with 1/2 cup raw cashews, a splash of plant milk or 2 tbsp Greek yogurt, pinch of salt and a drizzle of olive oil.
