Soy sauce, the condiment that engrained itself as an integral part of what the world of Japanese cuisine is today. Shodoshima is home to some of the oldest artisanal soy sauce factories, some over 400 years old. Some house cedar barrels that are centuries old and continue to age their moromi in these barrels today.
