PINCH OF PAELLA π₯π

INGREDIENTS π
2 tbsp olive oil
3 chicken thigh fillets, bite sized pieces
2 chorizo sausages, sliced into coins
1 large brown onion, diced
1 red capsicum, diced
3 garlic cloves, finely chopped
1 1β4 cup paella rice
1 can diced tomatoes
1 tsp turmeric
1 tsp smoked paprika
1 pinch of saffron threads
3 cups of chicken stock, heated
300g large raw prawns
1 cup frozen peas
Handful of fresh chopped flat parsley
Lemon wedges
METHOD π©βπ³
1. Heat olive oil over a medium heat in a medium sized paella pan or regular non-stick skillet. Add chicken and chorizo and cook for 3-4 minutes until chicken is browned on the outside, and chorizo is browned on both sides. Remove from pan and set aside.
2. Add onion and cook for 2-3 minutes until translucent, add capsicum and garlic and cook for a further few minutes.
3. Add paella rice, stirring until itβs evenly coated in oil. Return chicken and chorizo to the pan, along with spices and diced tomato, stirring to ensure the spices are evenly mixed through.
4. Add hot chicken stock, ensuring most of the rice is covered and bring to a simmer. Reduce heat to a low simmer and cook for 15 minutes, stirring regularly from the outside in, and the inside out as the liquid begins to reduce.
5. Top with prawns and cook for a further 5-6 minutes until the prawns have changed colour and are fully cooked, adding the peas halfway through.
6. Garnish with fresh parsley and serve with lemon wedges!
