I usually extract honey once a year, so it’s a blend of all the nectar the bees have brought in. This year I am extracting twice so will have spring and summer honey. The difference in flavour between this year’s spring honey and last year’s blend is amazing. Mostly because the spring honey doesn’t have any Lime Tilia nectar which has a very distinctive minty flavour. Anyway. This is some gelato Steve made from just 3 ingredients; Goats curd, crème fraîche and the spring honey. It was pretty special!
