Ginger-Tofu Ramen 💫⠀ ⠀ What is more satisfying than a big bowl of ramen noodles? This Vegan Ramen recipe is a soul-warming dish that the whole family will love. ♥︎♡︎⠀ ⠀ The entire dish comes together incredibly quickly, and what’s more, it is delicious! Packed with flavour and textures from the silky ramen noodles, tofu, veggies and a deeply-flavored ginger-miso broth. 💥⠀ ⠀ It's definitely one meal that will never get boring since It's completely customizable to anyone’s liking with a variety of delicious toppings and flavorings.🙌🏻🌈⠀ ⠀ i͟n͟ ͟gr͟e͟d͟i͟e͟n͟t͟s͟:͟⠀ ⠀ 1 tbsp vegetable oil⠀ 1 onion, chopped 🧅 3 garlic cloves 🧄 1–2 tbsp curry powder⠀ 1 tbsp @gourmetgarden_aus ginger paste ⚡️⠀ 2 tbsp white miso paste⠀ 2 tbsp soy sauce ⠀ 4 cups vegetable broth⠀ 1 can coconut milk 🥛⠀ 1 cup mushrooms of choice cut in halves ⠀ 1 pack of firm tofu, cut into cubes (approx. 400g) ⠀ 2 packages ramen noodles 🍜 ⠀ ⠀ ͟pr͟o͟c͟e͟s͟s͟:͟⠀ ⠀ ✔️Heat the oil in a large, deep pot over medium heat. Add the onion, garlic, ginger, and curry powder and saute for 3-5 minutes, until fragrant. ⠀ ✔️Add the remaining ingredients except for the ramen noodles and bring to boil. ⠀ Reduce heat to medium-low, cover and simmer for 10 minutes. ⠀ ✔️Add the ramen noodles and simmer until cooked (usually takes 3-4 minutes) ⠀ ✔️Serve ramen in bowls, and optionally garnish with sesame seeds, chilli flakes, sliced green onions & coriander... you get the idea.
