PINCH OF MUSHROOM SOUP 🍜
Wrapping up my winter warmers series with this this rich and creamy Hungarian mushy soup 🍜
Serves 4
Difficulty: easy
Time: 40 mins
Ingredients
3 tbsp salted butter
1 brown onion, diced
500g mushrooms (Swiss brown & white)
2 tbsp Hungarian paprika
2 tbsp fresh dill, chopped
1 tbsp fresh thyme, chopped
3 cups vegetable or chicken stock
2 tbsp soy sauce
3 tbsp plain flour
1 cup full fat milk
1/2 cup sour cream
Juice and zest of 1/2 a lemon
Pinch of salt & pep
Handful of fresh parsley, chopped
Crusty bread to serve
Method:
1. Heat butter in a large heavy based pot over a medium heat. Add onion and cook for 3-4 minutes until soft and translucent. Add mushrooms and cook for 10 minutes until soft.
2. Add paprika, dill and thyme and stir until evenly combined. Add stock, soy sauce and bring to a boil. Reduce heat to a simmer, cover and cook for 10 minutes, stirring occasionally so no precious mushies get stuck to the bottom 🫶.
3. In a small bowl, whisk flour and milk until evenly combined. Slowly stir into soup and cook for a further 10 minutes.
4. Remove from heat, stir in sour cream and lemon and garnish with fresh parsley.
