(grain free ⢠high protein ⢠meal prep)
The sauce is creamy, tangy, and salty sweet with no sugar and no noodles. I used cauliflower rice instead and itās so good.
Ingredients (makes 4 servings)
⢠1.5 lbs chicken breast, sliced
⢠2.5 cups cauliflower rice
⢠1 zucchini, chopped
⢠1 bell pepper, sliced
⢠4 eggs, scrambled
⢠2 cloves fresh garlic, minced
⢠1 handful fresh basil, chopped
⢠2 tbsp crushed cashews
Pad Thai Sauce
⢠1.5 tbsp PB2
⢠1 tbsp coconut aminos
⢠1 tbsp rice vinegar
⢠Juice of 1 lime
⢠1 tsp sesame oil (optional)
⢠2 tbsp water
Instructions
1. SauteĢ garlic in avocado oil
2. Add chicken and cook until golden then set aside
3. SauteĢ zucchini and bell pepper until tender
4. Scramble in 4 eggs
5. Stir in cauliflower rice
6. Add sauce and cooked chicken
7. Toss in fresh basil
8. Top with crushed cashews and more lime if you want
9. Let cool and store in 4 containers
