šŸœHEALTHY CHICKEN PAD THAI BOWLšŸœ (grain free • high protein • meal prep) The sauce is creamy, tangy, and salty sweet with no sugar and no noodles. I used cauliflower rice instead and it’s so good. Ingredients (makes 4 servings) • 1.5 lbs chicken breast, sliced • 2.5 cups cauliflower rice • 1 zucchini, chopped • 1 bell pepper, sliced • 4 eggs, scrambled • 2 cloves fresh garlic, minced • 1 handful fresh basil, chopped • 2 tbsp crushed cashews Pad Thai Sauce • 1.5 tbsp PB2 • 1 tbsp coconut aminos • 1 tbsp rice vinegar • Juice of 1 lime • 1 tsp sesame oil (optional) • 2 tbsp water Instructions 1. Sauté garlic in avocado oil 2. Add chicken and cook until golden then set aside 3. Sauté zucchini and bell pepper until tender 4. Scramble in 4 eggs 5. Stir in cauliflower rice 6. Add sauce and cooked chicken 7. Toss in fresh basil 8. Top with crushed cashews and more lime if you want 9.
