@pinch_of_maddie is back to share 3 delicious and easy ways to use the Coles Honey, Mustard & Garlic Dry Seasoning Mix! Chicken Salad 🥗 Skinless chicken thigh or breast Gem lettuce head, washed, chopped Corn cobs, charred or canned red onion, sliced avo, sliced cherry tomatoes, halved Dressing 🍋 2 tbsp extra virgin olive oil 2 tbsp honey 2 tsp wholegrain mustard Juice of 1 lemon Pinch of salt & pepper 1. Pat chicken dry with paper towel, add to a large bowl, coat in seasoning and 2 tbsp olive oil. Set aside to marinade until ready to cook. 2. Heat a non-stick pan, or BBQ over a med-high heat. Add chicken and cook for 6-7 mins on each side until completely cooked through. 3. add salad to a bowl, top with chopped chicken, drizzle dressing and garnish with your fave herbs! Sweet Potato Chips 🍟 1⁄2 pk Coles Frozen Sweet Potato Chips 1 sachet of seasoning mix 1 tbsp olive oil 1⁄2 cup kewpie mayo 2 garlic cloves, minced Juice of 1⁄2 a lemon Fresh parsley 1. Toss frozen chips in seasoning with 1 tbsp olive oil until evenly coated. Cook in airfryer or oven as per instructions on pack of until crunchy and cooked to your liking, as all airfryers are different so adjust as required. 2. For the garlicky aioli – mix garlic, lemon and kewpie in a bowl and refrigerate until needed. Creamy Chicken Braise 🍗 4-5 chicken thigh, drumstick or breast 1 sachet of seasoning mix 1 tbsp plain flour 1 1/2 cups chicken stock 1 brown onion, thinly sliced 1⁄2 cup thickened cream 1 bunch broccolini 1 cup frozen peas 1. Mix seasoning and flour in a bowl, add chicken and coat. Heat 2 tbsp of oil in a heavy based pan over a med-high heat. 2. Add chicken, and cook for 5-7 minutes until browning. Add onion, along with any remaining seasoning and cook for a further 2-3 minutes until softened. 3. Add chicken stock, reduce heat to a simmer for 15 minutes. Remove from heat, and gently stir through cream and add greens. 4. Garnish with fresh parsley, chives and a squeeze of fresh lemon! 5.
