How to make @nourishing.Amy’s Vegan Chocolate Cherry Loaf Cake 🍫🍒 A super fluffy and tender loaf cake packed with juicy cherries and chunks of dark chocolate all topped with a lighter cherry yoghurt frosting - who wants a slice? Chocolate Cherry Loaf Cake 🍫🍒 ⭐︎toss 150g pitted fresh cherries with 1 tsp flour ⭐︎to a large mixing bowl whisk together 120g natural or vanilla coconut yoghurt with 120ml plant-based milk + 30ml light olive oil + 120g caster sugar + 1 tbsp lemon juice + 1 tsp vanilla essence till smooth ⭐︎add in 180g sifted plain/GF plain flour + 1 1/2 tsp baking powder + 1/2 tsp bicarbonate of soda + add in 100g almond flour (or ground up sunflower seed or more flour for nut-free) + pinch of salt ⭐︎whisk till thick and smooth.
