QUICK 20 MINUTE PASTA 🍝 DINNER: This spinach & mushroom pasta is loaded with fresh veggies, and is on the table in 20 minutes, serve it as is, or add shrimp or chicken for extra protein. INGREDIENTS: 12 ounces farfalle (bow tie) pasta 3 tbsp olive oil 3 tbsp butter 12-16 ounces mushrooms, sliced 3-5 cloves garlic salt and pepper to taste 1 tsp red pepper flakes 1⁄2- 1 cup chicken of vegetable broth 6 cups fresh spinach 1/2 cup grated parmesan cheese DIRECTIONS: Cook pasta until al dente, drain and set aside. Heat 3 tbsp olive oil & 3 tbsp butter in a large skillet. add mushrooms and sauté about 3 minutes, add garlic and cook another 1-2 minutes; add salt and pepper to taste, followed by the pepper flakes.
