INGREDIENTS:
1 3/4 cups oat flour @scotmaplefoods
1 tsp baking powder
1 tsp baking soda
1/4 cup cocoa powder @rootalive
1/2 raw date sugar @livafoods
1/3 cup dark chocolate chips @enjoylifefoods
1/4 cup steel cut oats @bobsredmill
1 tbsp hemp seeds @manitobaharvest
2 flax eggs
1/3 cup olive oil @phoeapolisorganics
1 tsp vanilla extract
INSTRUCTIONS:
1. Combine oat flour, baking powder baking soda, raw date sugar, cocoa powder, half of the steel cut oats and half of the dark chocolate chips in a large bowl.
2. Mix together flax eggs, olive oil and vanilla extract in a small bowl then pour the mixture into the dry ingredients to combine.
3. In a prepared muffin pan, add the batter 3/4 full, and top with remaining steel cut oats and chocolate chips. Sprinkle with hemp seeds.
4. Bake in a preheated 400°F oven for 20 minutes and serve immediately. Enjoy!
