Adding some spice into your drinks is a fun way to change up a common cocktail recipe. But be careful, spice can often be overdone or manged incorrectly which will leave your palate with a heat predicament π₯΅π₯
A few key rules for applying spice into your drink:
1) test your peppers beforehand. Not all batches of peppers have the same heat level and be sure to see the potency level beforehand.
2) the majority of the heat comes from the inner pith of the pepper. If you like the taste but want less kick, cut away that part before adding to your drink.
3) mins your infusions. Pepper infusions donβt take long and need to be tested every 4-6 hours to see how the liquid is picking up the spice. I tend to leave my infusions for no more than 24 hours.
4) toast, grill, char, broil your peppers to add more depth into your drink. The process really rounds out the flavor.
5) wash your hands extremely well! These peppers can linger on your finger. Be sure to double wash and donβt touch your eyes for a while after (trust me).

When making a spicy margarita, I like to either infuse my tequila or make a spicy agave syrup. As well, if youβre in a rush you can also add a small pinch of cayenne pepper to the shaker and shake with it to add that perfect heat to your drink.
Spicy Margarita
β’ 2 oz resposado tequila
β’ .75 oz spicy agave syrup (boil water with peppers. Let it cool and add equal parts of water with agave. For an extra kick, keep the peppers in the syrup for 24 hours and then remove)
β’ 1 oz lime juice
β’ spice rim (@tajinusa works great here)
***DIRECTIONS: rim your glass beforehand. Combine ingredients into a tin with ice. Shake and strain over fresh ice in the rimmed glass. Enjoy!
